Squashy Eggs

Ingredients

  • 1 tsp extra virgin coconut oil
  • 1 cup Summer Squash, diced into 1/4 -inch pieces
  • 1/2 cup onion diced
  • 8 large Omega-3 Eggs
  • 1 cup Zucchini, diced into 1/4 -inch pieces
  • 2 clove garlic, minced

Directions

  1. Add coconut oil to pan over medium heat.
  2. Fry Squash, Onions, and Zucchini until lightly brown
  3. Scramble 8 eggs in the same pan with the veggies
  4. Add garlic or any other spices as you desire
  5. Eat
