Brussels sprout salad (with grass-fed burger)

Ingredients

  • 6 tbsp extra virgin olive oil
  • 2 tsp lemon juice
  • 1 small shallot, minced
  • 1 tbsp Dijon mustard
  • Black Pepper (to taste)
  • 1 clove garlic minced
  • 1 lb Brussels sprouts halved and sliced thin
  • 1/3 cup toasted sliced almonds

Directions

  1. Mix in large serving bowl, 3 tbsp olive oil, lemon juice, shallot, mustard, pepper and garlic
  2. Add uncooked Brussels sprouts to above mixture and stir until well coated
  3. Refrigerate 30 min – 2 hours prior to serving.
  4. Just before serving add sliced almonds and 3 tbsp of olive oil
  5. Serve chilled
  6. (Optional) Pairs well with grass-fed burger
