Anti-inflammatory Apple Crisp

Ingredients

  • 3 lbs of Apples, skinned and sliced
  • 1/4 cup maple syrup
  • 1/4 cup apple juice or apple cider
  • 1/4 cup arrowroot
  • 2 tsp Cinnamon
  • 1 tsp lemon juice
  • 1/4 tsp salt

Crumb topping

  • 2 cups almond flour
  • 1/4 cup of arrowroot flour
  • 1/2 cup almonds, chopped
  • 1/2 cup pecans, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 cup coconut oil

Directions

  1. Set oven to 350
  2. Stir together sliced apples, maple syrup, apple cider, arrowroot, cinnamon, lemon juice and salt.
  3. Add to 9 X 13 pan.
  4. Mix together crumb topping. Mix all dry ingredients and nuts. Add oil last. Crumb topping should be lightly moist. Add topping all over apple mixture.
  5. Bake in oven for 45 min to an hour. Apples should be soft.
  6. Let cool completely then serve.
  7. Enjoy!
