Anti-inflammatory Blueberry Crisp

Ingredients

  • 7 cups fresh blueberries
  • 1/4 cup arrowroot
  • 1 tsp lemon juice
  • 1 tsp cinnamon 
  • 1/2 cup coconut sugar
  • 2 cups almond flour
  • 1/2 cup coconut sugar (for topping)
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pecans
  • 1 tsp cinnamon (for topping)
  • 1/2 cup coconut oil
  • 1/4 cup arrowroot (for topping)

Directions

  1. Set oven to 350
  2. Stir – blueberries, arrowroot, lemon juice, cinnamon, and  coconut sugar until blueberries are evenly coated
  3. Add blueberry mix to a 9 x 13 pan.
  4. Mix – Almond flour, coconut sugar, chopped almonds, chopped pecans, cinnamon, and arrowroot (This is the topping mix)
  5. Add melted coconut oil to the topping mix and stir for 1 min
  6. Pour topping mix onto the blueberries
  7. Cook for 1 hour
  8. Let cool completely then serve
